Ready to get to the Middle Eastern flavors with a super quinoa tabbouleh? Since today we are heading over this amazing part of the world. I love cooking and I do believe we can always find some time to make a delicious dish for ourselves. It can be our upcoming lunch, today’s special dinner or tomorrow lunch box to bring with you at the job office.
Some time ago I had the luck of trying out a super tabbouleh dish and from that moment on I started to make it on my own. It is such a delicious dish, usually made with bulgur wheat, tomatoes, parsley, onions and cucumber, very refreshing and light. As you already know, I like mixing up ingredients and always try to make new recipes.

So, since I do love quinoa (a super powerful super food), I thought to make my version of tabbouleh with it.
The result? I am still in love with it and everytime I heard of it I dream.
Quinoa Tabbouleh with chickpeas
(50 gr. quinoa, 100 gr. chickpeas, 1 juicy tomato, chopped parsley, 1/2 sliced cucumber, extra virgin olive oil, lemon juice, turmeric, black pepper)
We do not need a lot of time to make it out. That is another reason you have no excuse to not to cook it 😀
All we need to do is to cook quinoa and after just mixing up all these amazing healthy ingredients. Then let us put quinoa in a saucepan and add double the amount of water. Let it cooks for 15 minutes, till the liquid is completely absorbed.
Then just bring quinoa into your plate and add chickpeas, sliced tomato and cucumber, parsley, lemon juice and dress it with extra virgin olive oil, black pepper and turmeric (your magical ally)
As easy as pie. You have just made your super dish of today.
